Zucchini Stir-fry

Ingredients:

  • 3 Tbl. olive oil
  • 1 lb. zucchini, cut into strips about 3” long (or cut in rounds)
  • 1 cup onion, cut in large pieces (or cut in rounds)
  • 6 mushrooms, sliced
  • 2 tsp. Sesame seeds
  •  1 Tbl. soy sauce
  • ½ tsp. salt
  • Dash pepper

Directions:

  1. Heat oil in a large skillet over medium heat.
  2. Add zucchini and onion.
  3. Cook uncovered, stirring frequently, until crisp-tender (about 5-8 minutes).
  4. Stir in sesame seeds, soy sauce, salt, and pepper.

Dehydrate:

Spread on covered dehydrator trays and dehydrate for 5 ½ hours at 145 degrees.

Yield: Serves 4

Rehydrate:

Cover with water just above level of food in pot, boil, stir, and serve.

Freezer bag cooking:

  1. Place freezer bag in cozy.
  2. Boil water.
  3. Pour water in bag to cover food.
  4. Zip bag.
  5. Set 15 – 20 minutes.
  6. Open bag carefully.
  7. Stir.
  8. Serve.

Serving Suggestion: Serve with rice.
